Meet Graham Hayes, the 2018 Toronto Regional AeroPress Champion.

Here’s one of Graham’s favorite recipe using the o2 filters based on the winning recipe that he used during the competition.

  • Grind: On a scale of 1-10: 3.5, size closer to kosher salt than table salt, but not as coarse
  • Coffee: 22g
  • Water: 200g
  • Temp: 92°C/197°F
  • Time: 4:00min
  • AeroPress: Inverted

Method
  • 0:00 start timer, 40g bloom, and stir slowly to saturate grounds, put the kettle back and turn it back on to bring the temp back up to 92°C/197°F. Wait 30 seconds.
  • 0:40 add 40g of water and stir very slowly for 3 seconds, put the kettle back on and bring the temp back to 92°C/197°F.
  • 1:15 repeat step from 0:40.
  • 2:15 repeat step from 0:40.
  • 3:15 add 40g of water and stir very slowly.
  • Using a spoon, scoop off the crust from the top of the coffee
  • Align ameuus o2 filters in the AeroPress filter cap. Tighten filter cap onto AeroPress.
  • 4:00 mark, turn AeroPress over, and slowly press for 10secs.
